Bakewell Tart

Shortcrust pastry
2 tablespoons raspberry jam
3oz margarine
3oz sugar
2oz ground rice
4oz ground almond
s 2 eggs
few drops of almond essence.

Line a pastry case with pastry, saving the offcuts.
Spread jam.
Cream margarine and sugar together.
Beat the eggs and add almond essence.
Mix together almonds and ground rice.
Add to creamed mix alternately with the beaten eggs.
Spread over jam.
Decorate with bits of left over pastry.
Bake at Gas Mark 5 (190C) for 35 minutes.
Ice if liked.
