8 oz flour
1 tsp baking powder
4 oz margarine
6 oz sugar
2 oz coconut
1 tsp vanilla essence
1 egg, beaten
Sift together flour and baking powder.
Rub in margarine.
Add sugar and coconut.
Mix to a dough with vanilla and beaten egg.
Shape into a long sausage and put onto a length of tin foil.
Wrap foil round and roll till the sausage is 5cm in diameter.
Refrigerate for 1 hour.
Slice as many as you want thinly from roll.
Place well apart on a greased baking sheet.
Bake at 190 (Gas Mark 5) for 10-12 minutes till pale gold.
Cool on a wire rack store in an airtight container when cold.
The rest can stay in the fridge for up to a week.
