Green Tomato Chutney

(yields 6-7lb = 5 jars)

5lb green tomatoes
1lb onions
1oz salt
1lb sugar
2 pints spiced vinegar
8oz raisins
8oz sultanas
1lb cooking apples, peeled cored and sliced

(yields 2 jars)

2lb green tomatoes
6.5oz onions
0.4oz salt
6.5oz sugar
0.8 pints spiced vinegar
3oz raisins
3oz sultanas
6.5oz cooking apples, peeled cored and sliced

Slice the tomatoes and chop the onions.
Mix together in a basin with the salt and leave to stand overnight.
Next day, add the sugar to the vinegar and bring to the boil.
Add chopped raisins, sultanas and apples.
Simmer for 10 minutes.
Add the strained tomato and onion and simmer for about an hour until thick.
Sterilise each jar by pouring in boiling water (put a knife in so it doesn't crack).
Pour chutney into the jars while it is still hot.
May be eaten immediately but improves with keeping.
