Countdown Jiffys

(makes 12)

100g margarine
75g+50g sugar
1 egg
50g chopped mixed peel
150g Self Raising flour
Jif lemon juice

Cream marg and 75g sugar together.
Add beaten egg.
Stir in peel.
Fold in sieved flours
Add 1 tsp Jif lemon.

Form into a soft dough.
Divide into 12.
Roll into balls using a little flour.
Lay on greased baking tray and dent the top of each one.
Bake at 190 degrees, Gas 5 for 20 minutes.

Dissolve 50g sugar in 1tbs lemon juice. As soon as the Jiffy's come out of the oven spoon a bit into each dent.
