1 lb potatoes 1 onion 2 eggs 2oz plain flour salt and pepper sunflower oil
Coarsely grate the potatoes and onion into a bowl. Add the eggs and flour. Season to taste. Mix well. Fry 3-4 pancakes at a time, flattening them slightly, for 5 minutes each side.
