Potato Salad

(makes a large bowl, store for 1-2 days in fridge)

1lb cold cooked potatoes
2 spring onions, finely chopped
150g mayonnaise
75ml fresh double cream
chives

Cube potatoes and mix with onions.
Add mayonnaise and cream and stir gently with a spoon until all cubes are thickly coated.
Mix in the chives.
