8oz can chopped tomatoes
1 medium onion, sliced
1 tsp Italian seasoning
6 oz SR flour
1 1/2 oz margarine
3 fl oz fresh milk
2oz frozen or fresh peppers
4oz cheddar cheese, grated
Simmer tomatoes, onion and seasoning until most of the liquid has evaporated.
Rub fat into flour and add milk.
Mix to a soft dough.
Roll into an 8 inch circle.
Place on a greased baking sheet and fold the edge to make a rim.
Stir vegetables into the tomato mixture and spoon over the base.
Top with cheese.
Bake at 200C (Gas Mark 6) for 20 minutes.
